Which turkeys taste better? Hens or Toms?
It's a matter of debate, but many believe that since Toms have larger bones and less, but more-muscular meat on them, that hens are slightly more tender.
Generally speaking, any store-bought turkey that weighs over 18 pounds is likely to be a Tom, while those below that weight are probably hens.
I love cooking turkeys, and contrary to this image, my new preferred way to cook them uses the "spatchcock" method. This is done by carefully removing the bird's backbone, then roasting it flat in a "half sheet" pan with a low-lying rack. So since the largest turkey that such a pan can accommodate is about 15 pounds, I'm definitely partial to hens. Gobble, gobble!
