Besides my love for shooting headshots in what I have called a "cinematic-lighting" style, I aslo enjoy the simplistic look of a person's face against a pure white background. Obviously, this look cannot be done efficiently outdoors and requires more lights and an indoor studio. That said, I have shot many headshots with this look on location. Yes, it involves packing up, transporting and setting up everything once there, but that's no problem for me at all. And by the way, even though I often crop into the heads of the subject for my own portfolio purposes, the final image that I deliver to clients always includes the entire head and enough background to facilitate the popular circular crop of many social media profiles.
